Monday
Broccoli & Cauliflower Cheese Gratin Recipe
Ingredients 180 g / 6 oz Grated Cheese 400 g / 14 oz Broccoli Florets 400 g / 14 oz Cauliflower 600 ml / 21.1 fl oz Boiling Water 140 g / 5 oz Béchamel Sauce Mix 8 g / 0.3 oz Grated Cheese for topping
Method
To make the cheese sauce, place the Béchamel sauce mix in a bowl and whisk in the boiling water until it thickens.
Season and add the grated cheese, remembering to save some for the top.
Cut up the cauliflower & broccoli into bite size pieces.
Place the vegetables in a pan with water and boil until cooked.
Drain the cauliflower and broccoli, then place in an oven proof dish.
Cover everything with the cheese sauce and sprinkle on some reserved cheese.
Heat in the oven till the cheese is golden brown.
Tuesday
Chicken Dhansak with Lemon & Coriander Rice Recipe
Ingredients 600 g / 1 lb 5 oz Diced Chicken Thigh 120 g / 4 oz Onions 120 g / 4 oz Mixed Peppers 16 ml / 0.6 fl oz Vegetable Oil 600 g / 1 lb 5 oz Chopped Tomatoes 80 g / 3 oz Tomato Puree 80 g / 3 oz Red Lentils
20 ml / 0.7 fl oz Malt Vinegar 12 g / 0.4 oz Curry Powder 4 g / 0.1 oz Chilli Powder 8 g / 0.3 oz White Sugar 20 g / 0.7 oz Coriander 440 g / 16 oz Basmati Rice 4 g / 0.1 oz Garlic Purée 1 Lemon
Method
Heat the oil in a heavy bottomed pan and sweat down the diced onions until softened but without colour.
Add the chicken, garlic and spices, then continue to cook until the chicken is sealed off.
Add the diced peppers to the pan for a few minutes, before adding the tomato puree and chopped tomatoes.
Bring to the boil, stirring continuously so that the pan doesn’t burn.
Add the lentils, sugar and vinegar, then bring back to the boil and simmer until the lentils and chicken are cooked.
Finish with the chopped stalks from the coriander – these have a lot more flavour than the leaves.
Cook the rice and drain. Fold through the juice and zest from the lemon as well as the chopped coriander leaves.

Beef Pie with Flaky Pastry Recipe
Ingredients 480 g / 1 lb 1 oz Minced Beef 80 g / 3 oz Onions 160 g / 6 oz Carrots 10 g / 0.4 oz Vegetable Bouillon Paste 335 ml / 11.8 fl oz Water 24 g / 0.8 oz Gravy Granules 320 g / 11 oz Puff Pastry
Method
Begin by browning off minced beef but do not add extra oil.
Add the chopped onion, stock and water, then bring to boil for a moment before simmering for approximately 1 hour.
Drain off the excess fat.
Thicken the mixture with gravy granules and adjust seasoning to taste.
To complete the recipe, place the beef mix into a suitable tray and roll the puff pastry out to cover the size of the pie, the pastry should be around the thickness of a £1 coin.
Thursday
Mushroom Carbonara Recipe
Ingredients 75 g / 3 oz Margarine 215 g / 8 oz Button Mushrooms 55 g / 2 oz Plain Flour 625 ml / 22.1 fl oz Milk 90 g / 3 oz Grated Cheese 35 g / 1 oz Garden Peas 375 g / 13 oz Penne Pasta (Or preferred shape of choice) One pinch of salt
Method
Melt a quarter of the margarine in pan, then fry the mushrooms until they are slightly browned.
Store the mushrooms to one side.
Melt the remaining margarine and then add in the flour stirring continually, cook for 2 minutes.
Add the milk, a little at a time, and beat well, then bring everything to the boil to thicken.
Stir in the mushrooms and cheese and mix well. Season with salt to taste.
Cook the pasta to your preferred style.
Place the pasta in base of the dishes and then pour the sauce on top to serve.
Friday
Salmon, Tomato & Sweetcorn Quiche Recipe
Ingredients 80 g / 3 oz Plain Flour 80 g / 3 oz Wholemeal Flour 28 ml / 1.0 fl oz Water 320 ml / 11.3 fl oz Milk 80 g / 3 oz Margarine 3 Eggs 400 g / 14 oz Salmon 72 g / 3 oz Sweetcorn 72 g / 3 oz Tomatoes 8 g 0.3 oz Fresh Parsley
Method
To make the pastry, start by placing the flour in a mixing bowl. Add margarine and rub in until it becomes a fine breadcrumb consistency.
Add the water and mix into a soft dough. Allow the mixture to rest before rolling.
To complete the recipe, line a flan dish with the pastry.
Beat the eggs together then add milk and season.
Drain the salmon (if needed) and flake. Add flaked salmon and sweetcorn to the dish then pour over the egg/milk mixture.
Bake in a moderate oven for approximately 45 minutes until filling is set.
Top/garnish with tomatoes and parsley before serving.
