For most of us, the holidays tend to sneak up without much warning and suddenly you’re at home for a week or two with little ones who crave attention and entertainment. Let Dolce’s easy Easter recipes come to the rescue with some delicious food ideas and quality activity-time suggestions to enjoy with the kids.

Traditionally in the UK, lamb forms the centrepiece of an Easter meal and there’s sure to be a whole host of splendid roast dinners being prepared over the holiday. Alternatively, we are quite aware that the modern lifestyle doesn’t often allow for the large demand on time and effort needed to produce these meals. So we’ve opted to share an easy to make recipe featuring lamb or alternatively, a vegetarian dish that pairs really well with the spring season.

Ingredients

Diced lamb – 400 g/14 oz
White Ware Potatoes – 200 g/7 oz
Carrots – 200 g/7 oz
Onions – 80 g/3 oz
Bouillon (Vegetable) – 10 g/0.4 oz
Water – 120 ml/4.2 fl oz
Oil (vegetable) – 8 ml/0.3 fl oz
Cornflour – 6 g/0.2 oz
Plain Flour – 200 g/7 oz
Margarine – 80 g/3 oz
Baking Powder – 10 g/0.4 oz

 Method
  1. Sear the lamb in a little hot oil.
  2. Chop up the carrots and onions.
  3. Put meat & chopped vegetables into a suitable container.
  4. Make up enough stock to cover the meat and vegetables.
  5. Cover and cook in a moderate oven until the meat and vegetables are tender.
  6. Thicken with cornflour if necessary.
    To make Dumplings.
  7. Sieve the flour & baking powder into a mixing bowl.
  8. Rub in the margarine and add water to make a soft dough.
  9. Form into balls and place on top of the cooked meat and vegetables.
  10. Bake in a hot oven for approx 15 – 20 mins or put in a steamer for approx 1 hr.
  11. Herbs may be added to the dumplings if required.

Sweet Potato, Courgette & Pea Frittata

Ingredients

Eggs x 8
Mixed Herbs – 1 g
Garden Peas – 48 g/2 oz
Grated Cheese – 160 g/6 oz
Garlic Powder – 2 g/0.1 oz
Courgettes – 40 g/1 oz
Onions – 40 g/1 oz
Sweet Potato – 400 g/14 oz
Vegetable Oil – 12 ml/0.4 fl oz

Method
  1. Peel, dice and boil the sweet potatoes until nearly cooked through then drain and dry off.
  2. Dice the onions and sweat down in the oil with the garlic powder and dried herbs.
  3. Dice the courgettes and add them to the pan.
  4. Cook for a few minutes until the courgettes start to soften, then remove from the pan.
  5. Place all the vegetables into a baking tray and mix with half of the cheese.
  6. Beat the eggs and then add them to the tray. After this top the dish with the rest of the cheese.
  7. Bake in the oven at 160 degrees C for 20-25 minutes until the eggs are completely cooked through to a core temperature of at least 82 degrees C.
